2 medium zucchinis, grated and excess moisture squeezed out

1 cup rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or dried fruits (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Zucchini: Grate the zucchinis using a box grater, then place them in a clean kitchen towel or paper towels and squeeze out as much moisture as possible.

      Mix the Dry Ingredients: In a large mixing bowl, combine rolled oats, almond flour, baking powder, baking soda, cinnamon, and salt. Mix well to blend all the dry ingredients.

        Combine the Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until fully combined.

          Fold Ingredients Together: Add the grated zucchini into the wet ingredients, mixing to ensure every bit of zucchini is coated. Then, pour the wet mixture into the bowl with the dry ingredients and stir until no dry pockets remain. If you're adding walnuts or chocolate chips, fold them into the batter now.

            Spread and Bake: Pour the mixture into the prepared baking dish and spread it out evenly with a spatula. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Cool and Cut: Allow the bars to cool in the baking dish for about 10 minutes, then lift out using the overhanging parchment paper. Transfer to a wire rack to cool completely before cutting into squares or bars.

                Serve and Enjoy: These bars can be served warm or at room temperature. Store leftover bars in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
