Zucchini Fries with Garlic Aioli

For Zucchini Fries:

2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking oil spray (or olive oil for drizzling)

For Garlic Aioli:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut each zucchini in half lengthwise, and then into fries about 1/2 inch thick. Pat them dry with a paper towel to remove excess moisture, which helps them get crispy.

      Set Up Breading Station: In three separate bowls, place the flour mixed with salt and pepper in one, whisk the eggs in the second, and combine the panko breadcrumbs with Parmesan, garlic powder, onion powder, paprika, salt, and pepper in the third bowl.

        Bread the Zucchini: Dip each zucchini fry first into the flour, coating it completely. Shake off excess flour before dipping into the beaten eggs. Finally, roll the zucchini in the panko mixture, making sure each fry is fully coated. Place the breaded zucchini fries on the prepared baking sheet in a single layer.

          Bake the Fries: Spray the zucchini fries lightly with cooking oil or drizzle with a bit of olive oil. Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
