Zucchini Crust Pepperoni Bites

2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mini pepperoni slices

1/4 cup pizza sauce (for dipping)

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, twist it up, and squeeze out as much moisture as possible. This step is crucial to achieving a crispy crust.

      Mix Ingredients: In a large mixing bowl, combine the drained zucchini, shredded mozzarella, grated Parmesan, egg, garlic powder, onion powder, oregano, salt, and black pepper. Stir until everything is well mixed.

        Shape the Bites: Using your hands, form small bite-sized discs out of the mixture. Place them on the prepared baking sheet, leaving space in between each piece.

          Add Pepperoni: Top each zucchini bite with a few slices of mini pepperoni, pressing them slightly into the crust.

            Bake: Place the baking sheet in the preheated oven and bake for 15–20 minutes or until the edges are golden brown and the cheese is bubbling.

              Cool and Serve: Remove from the oven and let the bites cool for a few minutes. Serve warm with pizza sauce for dipping and garnish with fresh basil if desired.
