2 medium zucchinis, grated

1 cup fresh or frozen sweet corn

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/2 teaspoon baking powder

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/4 cup fresh chopped herbs (such as cilantro or parsley)

1/4 cup grated Parmesan cheese (optional)

Olive oil, for frying

Sour cream or Greek yogurt, for serving

Sliced avocado, for topping (optional)

Prep the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towel and squeeze out excess moisture. This step is crucial for achieving crispy fritters.

    Mix the Batter: In a large mixing bowl, combine the grated zucchini, sweet corn, flour, cornmeal, and grated Parmesan cheese (if using).
