4 medium zucchinis

2 cups cooked chicken breast, shredded

1 cup romaine lettuce, chopped

½ cup Caesar dressing (store-bought or homemade)

½ cup grated Parmesan cheese

¼ cup croutons, crushed

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Prepare the Zucchinis: Preheat the oven to 400°F (200°C). Cut the zucchinis in half lengthwise and scoop out the center using a small spoon, leaving about 1/4 inch of flesh on the sides to create a boat. Place them on a baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper.

    Bake the Zucchini Boats: Bake the zucchinis in the preheated oven for 15 minutes to soften them slightly.

      Mix the Filling: In a large bowl, combine the shredded chicken, chopped romaine lettuce, Caesar dressing, and half of the Parmesan cheese. Stir well to coat all the ingredients evenly.

        Stuff the Zucchini: Once the zucchinis have baked, remove them from the oven. Spoon the chicken mixture into each zucchini boat, packing it in gently.

          Top & Bake Again: Sprinkle the remaining Parmesan cheese and crushed croutons evenly over the stuffed zucchinis. Return them to the oven and bake for an additional 10-12 minutes, or until the zucchini is tender and the topping is golden and crispy.
