2 medium zucchini, grated

2 medium apples (preferably Granny Smith or Honeycrisp), peeled and grated

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/2 cup brown sugar (or coconut sugar for a healthier option)

1/4 cup maple syrup (or honey)

1/4 cup melted coconut oil (or unsalted butter)

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or dried cranberries (optional)

Additional cinnamon for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the grated zucchini and apples. Using a clean kitchen towel or paper towels, gently squeeze out excess moisture to prevent the bake from becoming soggy. Set aside.

      In another bowl, mix together the rolled oats, almond flour, brown sugar, baking powder, ground cinnamon, nutmeg, and salt until well combined.

        Add the melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Stir until just combined.

          Fold in the grated zucchini and apple mixture until evenly incorporated. If using, gently mix in the chopped nuts and raisins/cranberries at this stage.

            Pour the mixture into the prepared baking dish, spreading it out evenly. Optional: sprinkle additional cinnamon on top for extra flavor.

              Bake in the preheated oven for 25-30 minutes or until the bake is golden brown and a toothpick inserted in the center comes out clean.
