2 medium flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded chicken (cooked)

1 cup fresh pineapple, diced

½ cup red bell pepper, diced

¼ cup red onion, finely chopped

1 jalapeño, deseeded and minced (adjust for spice preference)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Olive oil, for cooking

Sour cream or Greek yogurt, for serving

Instructions
 

Prepare the Pineapple Salsa: In a medium bowl, combine the diced pineapple, red bell pepper, red onion, minced jalapeño, and chopped cilantro. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Toss everything together until well combined. Set aside.

    Assemble the Quesadillas: Lay one flour tortilla flat on a clean surface. Sprinkle half of the shredded mozzarella cheese evenly over half of the tortilla. Layer on half of the cooked chicken followed by half of the prepared pineapple salsa. Top with another layer of mozzarella cheese and fold the tortilla over.

      Cook the Quesadillas: Heat a large skillet over medium heat and add a drizzle of olive oil. Once hot, carefully place the folded quesadilla into the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Flip the quesadilla and cook for an additional 3-4 minutes on the other side.

        Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut it into wedges and serve with sour cream or Greek yogurt on the side for dipping. Repeat the assembly and cooking process for the second quesadilla.

          Garnish & Enjoy: Optionally, top with extra pineapple salsa and a sprinkle of cilantro before serving.
