Ingredients

1 lb (450g) large shrimp, peeled and deveined

3 tablespoons olive oil

Zest and juice of 2 limes

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup fresh cilantro, finely chopped

Salt and pepper to taste

Lime wedges for serving

Cooked rice or quinoa (optional, for serving)

Instructions

Marinate the Shrimp: In a medium bowl, combine the olive oil, lime zest, lime juice, minced garlic, cumin, paprika, red pepper flakes, salt, and pepper. Stir well to create a marinade. Add the shrimp to the bowl and toss to coat evenly. Cover and let marinate in the refrigerator for at least 20 minutes, or up to 1 hour for more flavor.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp (discard any leftover marinade). Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.

Add Cilantro: Once the shrimp is cooked, remove the skillet from the heat. Stir in the chopped cilantro and mix until evenly distributed.

Serve: Serve the Zingy Cilantro Lime Shrimp immediately with lime wedges on the side. This dish pairs beautifully with cooked rice, quinoa, or even on top of tacos! Garnish with extra cilantro if desired.
