Zesty Pineapple Chicken Quesadillas

Ingredients
  

2 cups cooked chicken, shredded (rotisserie works great)

1 cup fresh pineapple, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup shredded Monterey Jack cheese

1/2 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Juice of 1 lime

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

Sour cream and salsa for serving (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine shredded chicken, diced pineapple, red bell pepper, red onion, shredded Monterey Jack cheese, cilantro, cumin, smoked paprika, chili powder, lime juice, and a pinch of salt and pepper. Mix thoroughly until all ingredients are well incorporated.

    Heat the Tortillas: In a large skillet over medium heat, add 1 tablespoon of olive oil. Place one tortilla in the skillet and warm it for about 1-2 minutes, or until it starts to get soft.

      Add Filling: Evenly spread about 1 cup of the chicken and pineapple filling on half of the tortilla. Fold the tortilla in half to create a half-moon shape.

        Cook the Quesadilla: Cook for 3-4 minutes on one side until golden and crispy, then carefully flip and cook for another 3-4 minutes on the other side. Remove from the skillet and keep warm. Repeat with the remaining tortillas and filling, adding more oil to the skillet as needed.

          Serve: Cut each quesadilla into wedges and serve hot with sour cream and salsa on the side for dipping. Garnish with extra cilantro if desired.
