Ingredients
  

1 large ciabatta roll or baguette

1/4 cup hummus (any flavor you prefer)

1/4 cup roasted red peppers (jarred or homemade), sliced

1 medium zucchini, thinly sliced

1 small cucumber, thinly sliced

1 medium heirloom tomato, sliced

1 cup baby spinach or arugula

1/4 cup marinated artichoke hearts, chopped

2 tablespoons balsamic glaze

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 tablespoon olive oil (optional)

Instructions
 

Prep the Bread: Slice the ciabatta roll or baguette in half lengthwise. If desired, lightly toast the inside of the bread on a skillet or in a toaster for added crunch.

    Spread the Hummus: Evenly spread the hummus on both halves of the bread.
