Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts

Juice of 2 limes

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For the Taco Bowls:

2 cups cooked rice (white, brown, or cilantro-lime rice)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup red onion, finely chopped

1 cup shredded lettuce

1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salsa or hot sauce (optional)

Instructions

Marinate the Chicken: In a bowl, combine lime juice, olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Add the chicken and coat well. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade, letting excess drip off. Cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (74°C). Remove from heat and allow to rest for 5 minutes, then slice.

Assemble the Bowls: In individual serving bowls, start layering the ingredients. Begin with a base of cooked rice, then add black beans, corn, cherry tomatoes, diced avocado, red onion, and shredded lettuce.

Top with Chicken: Place slices of grilled chicken on top of the assembled bowl ingredients. Sprinkle with shredded cheese and chopped cilantro.

Serve: Add lime wedges and a drizzle of salsa or hot sauce if desired. Enjoy your vibrant and zesty chicken taco bowls!
