Zesty Buffalo Cauliflower Wraps

1 medium head of cauliflower, cut into florets

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 cup buffalo sauce (adjust for spice preference)

4 large tortillas (whole wheat or gluten-free)

1 cup shredded lettuce

1 medium tomato, diced

1/2 avocado, sliced

1/4 cup blue cheese crumbles (optional)

Fresh cilantro, for garnish

Olive oil spray

Prep the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. In a mixing bowl, whisk together flour, water, garlic powder, onion powder, paprika, and salt until smooth. Add cauliflower florets and toss to coat evenly.

    Roast the Cauliflower: Spread the coated cauliflower evenly on the prepared baking sheet. Lightly spray with olive oil. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown and crispy.

      Buffalo Sauce: Once the cauliflower is roasted, remove it from the oven. In a large bowl, combine the roasted cauliflower with buffalo sauce, gently stirring until all pieces are well coated.

        Assemble the Wraps: Lay out each tortilla on a clean surface. Add a handful of shredded lettuce, a few spoonfuls of the buffalo cauliflower, diced tomatoes, avocado slices, and blue cheese crumbles (if using) to the center of each tortilla.

          Wrap It Up: Fold the sides of the tortilla inwards and then roll from the bottom up to secure the filling inside. If desired, you can toast the wraps on a skillet over medium heat for added crunch.
