1 can (15 oz) black beans, rinsed and drained

1 cup fresh or frozen corn (thawed if frozen)

1 red bell pepper, diced

1 small red onion, finely chopped

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

12 small lettuce cups (iceberg or butter lettuce)

Optional: feta cheese or queso fresco for garnish

Instructions
 

In a large mixing bowl, combine the black beans, corn, diced red bell pepper, and chopped red onion.

    Gently fold in the diced avocado and chopped cilantro.

      In a small bowl, whisk together the lime juice, ground cumin, chili powder, salt, and pepper. Adjust seasoning according to your taste preference.

        Pour the lime dressing over the black bean mixture and toss gently to coat all the ingredients evenly.

          To assemble, take the lettuce cups and fill each one generously with the zesty black bean corn salad.
