Ingredients

4 cups seedless watermelon, cubed and frozen

1/2 cup fresh mint leaves

1/4 cup lime juice (about 2 limes)

2 tablespoons honey or agave syrup (adjust to taste)

1 cup coconut water or sparkling water

Extra mint leaves for garnish

Lime wedges for garnish

Instructions

Prepare the Watermelon: If you haven’t done so already, cut the watermelon into cubes and freeze them for at least 4 hours, or overnight for best results.

Blend the Ingredients: In a high-speed blender, combine the frozen watermelon cubes, fresh mint leaves, lime juice, honey or agave syrup, and coconut water/sparkling water.

Blend Until Smooth: Blend on high until the mixture is smooth and slushy in consistency. If it’s too thick, add a little more water until you reach your desired consistency.

Taste and Adjust: Taste the slush and adjust sweetness by adding more honey/agave syrup if needed, and blend again for a few seconds.

Serve: Pour the slush into chilled glasses. Garnish with extra mint leaves and a lime wedge for an extra pop of color and flavor.

Enjoy: Serve immediately with a straw or spoon, and enjoy your refreshing treat!
