Ingredients

4 cups fresh arugula, washed and dried

2 cups ripe watermelon, cubed

1 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup toasted walnuts or pecans, roughly chopped

1/2 cup fresh mint leaves, torn

Juice of 1 lime

2 tablespoons olive oil

Salt and black pepper to taste

Instructions

Prepare the Ingredients: Start by washing and drying the arugula thoroughly. Cube the watermelon into bite-sized pieces and slice the red onion thinly. If you haven't done so already, toast the walnuts or pecans in a dry skillet over medium heat until fragrant, about 3-5 minutes. Let them cool.

Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper until well combined. This will be your refreshing dressing.

Combine the Salad: In a large salad bowl, add the arugula, cubed watermelon, and sliced red onion. Gently toss the ingredients together.

Add Feta and Nuts: Sprinkle the crumbled feta cheese and the toasted walnuts or pecans over the top of the salad.

Dress the Salad: Drizzle the lime dressing over the salad and toss gently to combine, ensuring the dressing lightly coats all the ingredients.

Garnish: Finally, add the torn mint leaves on top for an extra burst of flavor and freshness. Toss lightly one last time.

Serve: The salad can be served immediately for a fresh crunch or left to sit for about 10 minutes to allow the flavors to meld beautifully.
