Warm Cinnamon Roll Baked Oatmeal

2 cups rolled oats

2 cups almond milk (or milk of choice)

1/2 cup brown sugar, packed

2 large eggs

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup Greek yogurt (or applesauce for a dairy-free option)

1/2 cup chopped pecans or walnuts (optional)

1/2 cup raisins or dried cranberries (optional)

Cinnamon Swirl Mixture:

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 tablespoons melted butter or coconut oil

Cream Cheese Glaze:

4 oz cream cheese, softened

1/4 cup powdered sugar

1 tablespoon milk

1/2 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish or line it with parchment paper.

    Prepare Oat Mixture: In a large mixing bowl, combine the rolled oats, almond milk, 1/2 cup brown sugar, eggs, vanilla extract, ground cinnamon, nutmeg (if using), baking powder, salt, and Greek yogurt. Mix well until all ingredients are fully combined, and set aside for about 10 minutes to allow the oats to absorb some moisture.

      Make the Cinnamon Swirl: In a small bowl, mix together the 1/4 cup brown sugar, 1 tablespoon ground cinnamon, and melted butter (or coconut oil) until it forms a thick paste.

        Layer the Oatmeal Mix: Pour half of the oatmeal mixture into the prepared baking dish. Drizzle half of the cinnamon swirl mixture over the top, and use a knife or skewer to swirl it slightly into the oatmeal layer.

          Add Remaining Oat Mix: Pour the remaining half of the oatmeal mixture over the first layer and then drizzle the remaining cinnamon swirl mixture on top. Swirl again gently with a knife to create a marbled effect.

            Optional Add-ins: If using, sprinkle chopped pecans or walnuts and raisins or dried cranberries on top of the oatmeal before baking.

              Bake: Place the dish in the preheated oven and bake for 30-35 minutes or until golden brown and set in the center.

                Make the Cream Cheese Glaze: While the oatmeal bakes, prepare the glaze by mixing the softened cream cheese, powdered sugar, milk, and vanilla extract in a small bowl until smooth and creamy.

                  Serve: Once the baked oatmeal is ready, remove it from the oven and allow it to cool for a few minutes. Drizzle the cream cheese glaze over the warm oatmeal and serve warm. Enjoy!
