1 lb baby carrots, peeled

3 tablespoons unsalted butter

2 tablespoons pure maple syrup

2 teaspoons fresh thyme leaves (or 1 teaspoon dried)

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)

Salt and black pepper to taste

Zest of 1 orange

1 tablespoon orange juice

Optional: chopped parsley for garnish

Prepare the Carrots: Start by peeling the baby carrots, ensuring they are clean and ready for cooking. You can keep them whole or cut them in half if they are particularly thick.

    Blanch the Carrots: Bring a medium pot of salted water to a boil. Add the baby carrots and blanch them for about 3-4 minutes, until slightly tender but still crisp. Drain the carrots and set aside.

      Make the Butter Sauce: In a large skillet, melt the unsalted butter over medium heat. Once melted and bubbly, stir in the maple syrup, thyme, rosemary, salt, and pepper. Let the mixture cook for about 2-3 minutes to combine the flavors.

        Cook the Carrots: Add the blanched carrots to the skillet with the butter and herb mixture. Toss the carrots to coat them evenly in the sauce. Cook for an additional 5-7 minutes, stirring occasionally, until the carrots are tender and have absorbed the flavors of the sauce.
