2 medium zucchinis, diced

1 cup fresh or frozen sweet corn (thawed if frozen)

1 red bell pepper, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

Juice of 2 limes

2 tbsp olive oil

1 tsp honey (or maple syrup for vegan)

Salt and pepper to taste

1/2 tsp chili powder (optional)

1/4 tsp cumin (optional)

Prep the Ingredients: Start by washing and dicing the zucchinis, red bell pepper, red onion, avocado, and cilantro. If using fresh corn, you can cut the kernels off the cob. If using frozen corn, ensure it’s properly thawed.

    Mix the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey (or maple syrup), salt, pepper, chili powder, and cumin until well combined.
