Ingredients

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

8 small corn or flour tortillas

1 avocado, sliced

1 fresh lime, cut into wedges

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Optional toppings: diced tomatoes, sour cream, hot sauce, or salsa

Instructions

Prep the Black Bean Mixture: In a medium skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

Combine Ingredients: Next, stir in the black beans, corn, ground cumin, smoked paprika, salt, and pepper. Cook the mixture for about 5-7 minutes until it's heated through and the flavors meld together.

Melt the Cheese: Reduce the heat to low, and sprinkle the shredded cheese evenly over the black bean mixture. Cover the skillet with a lid and let it sit for 2-3 minutes until the cheese is melted and gooey.

Warm the Tortillas: While the cheese is melting, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and warm them in the oven.

Assemble the Tacos: Once the cheese has melted, remove the skillet from heat. Spoon generous amounts of the cheesy black bean mixture onto each tortilla.

Add Toppings: Top the tacos with avocado slices and garnish with freshly chopped cilantro. Serve with lime wedges on the side for an extra zesty flavor.

Serve and Enjoy: If desired, add additional toppings like diced tomatoes, sour cream, or hot sauce to your tacos. Enjoy your delicious vegetarian cheesy black bean tacos!
