Tofu Skewers with Strawberry Salsa

For the Tofu Skewers:

14 oz firm tofu (pressed and drained)

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons maple syrup

1 teaspoon garlic powder

1 teaspoon ground ginger

1 tablespoon rice vinegar

Salt and pepper to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

½ red onion, finely chopped

1 medium jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Prepare the Tofu Marinade:

    - In a bowl, mix together soy sauce, sesame oil, maple syrup, garlic powder, ground ginger, rice vinegar, salt, and pepper.

      Marinate the Tofu:

        - Cut the pressed tofu into 1-inch cubes and add them to the marinade. Toss gently to coat all pieces. Let it sit for at least 30 minutes to absorb the flavors (you can refrigerate it for longer if desired).

          Make the Strawberry Salsa:

            - In a separate bowl, combine the diced strawberries, red onion, jalapeño, and cilantro. Squeeze lime juice over the mixture and season with salt and pepper. Gently mix and set aside for the flavors to meld.

              Assemble the Skewers:

                - Preheat a grill or grill pan over medium-high heat.

                  - Thread the marinated tofu cubes onto skewers, spacing them out evenly.

                    Grill the Skewers:

                      - Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden brown and slightly charred.

                        Serve:

                          - Remove the skewers from the grill and let them cool slightly before serving.

                            - Serve the grilled tofu skewers warm, topped with the refreshing strawberry salsa.
