8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup whole milk

1/2 cup heavy cream

1/4 cup mayonnaise (the surprise ingredient!)

3 tbsp unsalted butter

2 tbsp all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

1/2 cup panko bread crumbs

Fresh chives, chopped for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour to form a roux. Cook for about 1-2 minutes until lightly golden.

      Add Dairy: Gradually whisk in the whole milk and heavy cream, stirring continuously to avoid lumps. Cook until the mixture thickens slightly.

        Incorporate Cheeses: Remove the saucepan from heat and stir in the shredded cheddar and Gruyère cheese until melted and smooth. Add the garlic powder, onion powder, smoked paprika, salt, black pepper, and the secret ingredient – mayonnaise! Mix well until fully combined.
