Ingredients

2 large cucumbers, spiralized into noodles

1 cup shredded carrots

1 red bell pepper, julienned

1 cup red cabbage, finely shredded

1 cup fresh cilantro, chopped

1/2 cup chopped peanuts or cashews (for garnish)

1/4 cup scallions, thinly sliced

1/4 cup fresh lime juice

2 tablespoons fish sauce (or soy sauce for a vegetarian option)

1 tablespoon maple syrup or honey

2 teaspoons sesame oil

1 teaspoon minced garlic

1 teaspoon grated ginger

1 teaspoon red pepper flakes (optional for extra heat)

Instructions

Prepare the Vegetables: Start by spiralizing your cucumbers into noodle-like strips using a spiralizer. Place the cucumber noodles in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to draw out excess moisture. After that, pat them dry with a paper towel.

Mix the Base Ingredients: In a large mixing bowl, combine the spiralized cucumbers, shredded carrots, sliced bell pepper, red cabbage, and chopped cilantro.

Make the Dressing: In a separate bowl, whisk together the lime juice, fish sauce (or soy sauce), maple syrup (or honey), sesame oil, minced garlic, grated ginger, and red pepper flakes if using. Taste and adjust seasoning if necessary.

Combine Salad and Dressing: Pour the dressing over the vegetable mixture and toss gently until everything is well combined and coated in the dressing.

Serve and Garnish: Divide the salad into serving bowls. Top with chopped peanuts or cashews and sprinkle with sliced scallions for added crunch and flavor.

Enjoy: Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together. This salad is refreshing, vibrant, and perfect for a light meal or as a side dish!
