1 cup quinoa, rinsed

2 cups vegetable broth or chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup diced tomatoes (fresh or canned)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 cup shredded cheese (cheddar or a Mexican blend)

¼ cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

1 avocado, sliced (for serving)

Sour cream (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a medium-sized pot, bring the vegetable or chicken broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15-20 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and fluff with a fork.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and garlic. Sauté for about 3-5 minutes until the onion becomes translucent.

        Combine Ingredients: In the skillet, add the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, smoked paprika, salt, and black pepper. Stir well to combine everything to ensure the flavors meld together.

          Assemble the Casserole: Transfer the quinoa mixture to a greased 9x13 inch (or equivalent) baking dish. Sprinkle the shredded cheese evenly over the top.
