1 lb ground turkey

1 cup long-grain white rice

2 cups chicken broth (low sodium)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (frozen or fresh)

1 cup diced tomatoes (canned or fresh)

1/2 cup diced red onion

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

1/2 cup shredded cheddar cheese

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Rice: In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid has been absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

      Cook the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until the turkey is browned and cooked through, about 6-8 minutes, breaking it apart with a spatula as it cooks.

        Add the Spices and Vegetables: Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well, then add the black beans, corn, and diced tomatoes. Cook for an additional 5 minutes, stirring occasionally, until everything is heated through.

          Assemble the Bowls: In serving bowls, start with a base of the cooked rice. Top with the ground turkey mixture. Sprinkle with shredded cheddar cheese, and arrange avocado slices on top.
