Teriyaki Tofu Rice Wraps

1 block (14 oz) firm tofu, pressed and sliced into thin strips

1 cup uncooked jasmine rice

2 cups water (for cooking rice)

½ cup teriyaki sauce (store-bought or homemade)

1 tbsp sesame oil

1 cup shredded carrots

1 cup cucumber, julienned

1 red bell pepper, thinly sliced

¼ cup green onions, chopped

4 large nori sheets (seaweed)

1 tbsp sesame seeds (for garnish)

Lettuce leaves (for wrapping)

Optional: Sriracha or chili sauce for extra heat

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until it runs clear. Combine the rice and 2 cups of water in a medium saucepan and bring to a boil. Once boiling, reduce heat to low, cover, and let simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes, fluffing it with a fork after.

    Marinate the Tofu: In a bowl, combine the sliced tofu and teriyaki sauce. Let it marinate for at least 15 minutes (up to overnight in the refrigerator for more flavor).

      Cook the Tofu: Heat the sesame oil in a non-stick skillet over medium-high heat. Remove the tofu from the marinade (reserve the marinade) and add it to the skillet. Cook for about 3-4 minutes on each side until golden brown. Pour in the reserved teriyaki marinade and cook for another 2-3 minutes until thickened and coating the tofu. Remove from heat.

        Assemble the Wraps: On a clean, flat surface, lay out a nori sheet (shiny side down). Place a layer of cooked jasmine rice in the center, leaving space on the sides. Add a few strips of the teriyaki tofu, followed by shredded carrots, cucumber, sliced bell pepper, and green onions.

          Wrap the Nori: Fold the bottom edge of the nori sheet over the filling, then fold the sides in towards the center. Roll the wrap tightly from the bottom to the top, sealing it with a bit of water.

            Garnish and Serve: Cut the wraps in half, sprinkle with sesame seeds, and serve with additional teriyaki sauce or Sriracha if desired. Enjoy the fresh and flavorful burst in each bite!
