Teriyaki Tofu Rice Wraps

1 block (14 oz) firm tofu, pressed and drained

1 cup cooked brown rice

4 large rice paper wraps

1 cup mixed vegetables (carrot, bell pepper, cucumber, julienned)

¼ cup green onions, thinly sliced

¼ cup fresh cilantro, chopped

¼ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Sesame seeds for garnish

Instructions
 

Prep the Tofu: Slice the pressed tofu into thin strips. In a bowl, mix the teriyaki sauce, soy sauce, rice vinegar, garlic powder, sesame oil, salt, and pepper. Marinate the tofu strips in this sauce for at least 15 minutes, turning occasionally to ensure all pieces are coated.

    Cook the Tofu: Heat a non-stick skillet over medium heat. Once hot, add the marinated tofu and cook for about 5-7 minutes on each side or until golden brown and slightly crispy. Remove from heat and set aside.

      Prepare the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrap into the water for about 15 seconds until it softens. Lay it flat on a clean surface.

        Assemble the Wraps: In the center of the softened rice paper, place a small amount of cooked brown rice, followed by a few strips of cooked tofu, a handful of mixed vegetables, some green onions, and fresh cilantro. Be careful not to overfill.

          Roll the Wrap: Start by folding the sides of the rice paper towards the center over the filling, then roll from the bottom upward to encase everything tightly. Repeat this process with the remaining rice paper wraps and filling.

            Serve: Cut the rolls in half and garnish with sesame seeds. Serve with extra teriyaki sauce on the side for dipping.
