Teriyaki Glazed Meatball Skewers

For the Meatballs:

1 pound ground beef (or ground turkey for a healthier option)

1/2 cup breadcrumbs (Panko works great)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 egg

2 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

For the Teriyaki Glaze:

1/2 cup soy sauce

1/4 cup brown sugar

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Optional: sesame seeds and sliced green onions for garnish

Preheat the Grill: Heat your grill to medium-high heat (about 375°F to 400°F).

    Make the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, minced garlic, grated ginger, egg, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

      Form the Meatballs: Shape the mixture into approximately 1-inch meatballs. Make sure they are compact to hold their shape while cooking.

        Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Once ready, thread 3-4 meatballs onto each skewer.

          Prepare the Teriyaki Glaze: In a small saucepan, combine the soy sauce, brown sugar, rice vinegar, honey, sesame oil, garlic powder, ginger powder, and bring to a boil over medium heat. Stir in the cornstarch slurry and cook for another 1-2 minutes or until it thickens. Remove from heat and set aside.

            Grill the Skewers: Place the meatball skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally and basting with the teriyaki glaze until the meatballs are cooked through and have a nice glaze on the outside.

              Serve: Once cooked, remove the skewers from the grill. Drizzle with any remaining teriyaki glaze and garnish with sesame seeds and sliced green onions.
