Ingredients

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tbsp soy sauce

1 tbsp oyster sauce

2 tsp sesame oil

1 tbsp vegetable oil (for frying)

1 bell pepper (red or yellow), sliced into strips

1 cup broccoli florets

1 medium carrot, julienned

1 cup snap peas

3 green onions, chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Salt and pepper to taste

Cooked rice or noodles (for serving)

Instructions

Marinate the Chicken: In a bowl, combine the sliced chicken, soy sauce, oyster sauce, and sesame oil. Mix well and let it marinate for at least 15-20 minutes to enhance the flavors.

Prep the Veggies: While the chicken marinates, prepare the vegetables. Slice the bell pepper, julienne the carrot, and trim the snap peas. Set aside.

Heat the Pan: In a large wok or skillet, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

Cook the Chicken: Add the marinated chicken to the pan. Stir-fry for approximately 5-7 minutes or until cooked through and lightly browned. Remove the chicken from the pan and set aside.

Stir-Fry the Vegetables: In the same pan, add a bit more oil if needed. Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas. Stir-fry for about 3-4 minutes, or until the vegetables are vibrant and just tender.

Combine Everything: Return the cooked chicken to the pan with the vegetables. Add the cornstarch slurry to the mixture, stirring well to combine and thicken the sauce. Cook for an additional 2-3 minutes until everything is warmed through and nicely coated.

Final Touches: Season with salt and pepper to taste, and toss in the chopped green onions just before removing from heat.

Serve: Serve hot over a bed of rice or toss with noodles. Enjoy your colorful and delightful Chicken and Vegetable Stir-Fry!
