Ingredients

2 cups rolled oats

2 cups almond milk (or any milk of your choice)

1 cup fresh strawberries, chopped

1/4 cup honey or maple syrup (adjust for sweetness)

1/4 cup almond butter (or any nut butter)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

A pinch of salt

Optional toppings: additional sliced strawberries, chopped nuts, shredded coconut

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a muffin tin or using silicone muffin cups.

Mix Wet Ingredients: In a large bowl, combine the almond milk, honey (or maple syrup), almond butter, and vanilla extract. Whisk until thoroughly mixed.

Add Dry Ingredients: In another bowl, combine the rolled oats, baking powder, cinnamon, and a pinch of salt. Mix well.

Combine Mixtures: Gradually add the dry oat mixture to the wet mixture, stirring until just combined. Fold in the chopped strawberries gently.

Fill Muffin Tins: Spoon the oat mixture into each muffin cup, filling them about ¾ full. Optionally, you can top each cup with a few additional strawberry slices or sprinkle with nuts for added texture.

Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and the cups are set.

Cool and Serve: Remove from the oven and allow to cool for about 10 minutes in the tin. Gently remove the oat cups and serve warm or at room temperature. They are delightful on their own or with a dollop of yogurt.
