1 cup fresh pineapple chunks (or canned, drained)

1/2 cup red bell pepper, thinly sliced

1/2 cup green bell pepper, thinly sliced

1/4 cup red onion, thinly sliced

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon Sriracha (adjust to taste)

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper, to taste

4 large tortillas (whole wheat or flour)

1/2 cup fresh cilantro leaves, chopped

Lime wedges, for serving

Marinate the Chicken: In a medium-sized bowl, combine the diced chicken, soy sauce, honey, Sriracha, garlic powder, ground ginger, salt, and pepper. Mix well to ensure the chicken is evenly coated. Cover and let marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: In a large skillet, over medium heat, add a drizzle of olive oil. Once hot, add the marinated chicken along with its marinade. Cook for about 7-10 minutes or until the chicken is cooked through and slightly caramelized, stirring occasionally.
