Ingredients

1¼ cups graham cracker crumbs

½ cup unsweetened shredded coconut

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 cup fresh raspberries (or frozen, thawed)

1 cup sweetened condensed milk

½ teaspoon vanilla extract

¼ teaspoon salt

½ cup white chocolate chips (optional, for drizzling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, allowing some overhang for easy removal later.

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, shredded coconut, and granulated sugar. Pour in the melted butter and stir until the mixture is well combined and resembles wet sand. Press this mixture evenly into the bottom of the prepared baking pan.

Bake the Crust: Bake the crust in the preheated oven for 10 minutes or until lightly golden. Remove from the oven and let it cool slightly.

Prepare the Raspberry Layer: In a medium bowl, gently mash the raspberries with a fork, leaving some chunky pieces for texture. Add the sweetened condensed milk, vanilla extract, and salt to the raspberries, mixing until just incorporated.

Spread the Raspberry Mixture: Pour the raspberry mixture over the cooled crust, spreading it out evenly with a spatula.

Bake Again: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly bubbling around the edges. Remove from the oven and allow it to cool at room temperature for about 30 minutes.

Chill in the Fridge: Once cooled, cover the pan with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to let everything set properly.

Optional Drizzle: If desired, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle over the chilled slices before cutting.

Slice and Serve: Remove the slices from the pan using the parchment overhang. Cut into squares or bars and serve chilled or at room temperature. Enjoy your delicious Sweet Raspberry Coconut Slices!
