Sweet Raspberry Chia Squares

1 cup fresh or frozen raspberries

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lemon juice

1/4 cup chia seeds

1 cup rolled oats

1/2 cup almond flour (or any gluten-free flour of your choice)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/3 cup coconut oil (melted) or unsweetened applesauce

Optional: 1/2 cup dark chocolate chips for topping or a sprinkle of shredded coconut

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Raspberry Mixture: In a small saucepan over medium heat, combine the raspberries, honey (or maple syrup), and lemon juice. Cook while gently stirring until the raspberries break down and form a thick sauce, about 5-7 minutes. Remove from heat and let it cool slightly.

      Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, chia seeds, baking powder, and salt. Mix well until combined.

        Combine Wet Ingredients: In another bowl, mix together the melted coconut oil (or applesauce) and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.

          Combine Raspberry Sauce and Oat Mixture: Pour the cooled raspberry mixture into the oat mixture and fold gently until everything is evenly incorporated. If you like, fold in chocolate chips at this point.

            Bake the Squares: Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula. Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and the center is set.

              Cool and Cut: Allow the squares to cool in the pan for at least 10 minutes before lifting them out using the parchment paper. Cut into squares or bars and let them cool completely on a wire rack.
