2 medium sweet potatoes

4 large eggs

¼ cup feta cheese, crumbled

1 ripe avocado, sliced

1 teaspoon olive oil

½ teaspoon smoked paprika

Fresh herbs (like parsley or chives), for garnish

Red pepper flakes (optional, for a kick)

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce them with a fork multiple times. Place them on a baking sheet and roast in the preheated oven for 45-60 minutes, or until soft.

    Cook the Eggs: While the sweet potatoes are roasting, heat olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook them sunny-side up or to your desired doneness. Season with salt, pepper, and smoked paprika.
