1 medium sweet potato

1 ripe avocado

2 slices of whole-grain bread (or your choice of bread)

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

1 tablespoon lemon juice

Optional toppings: Crumbled feta cheese, red pepper flakes, microgreens, or poached egg

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). Wash and peel the sweet potato, then slice it into thin rounds (about 1/4 inch thick). Toss the slices in a bowl with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
