1 medium sweet potato

1 ripe avocado

2 slices of whole grain or sourdough bread

1 tbsp olive oil

1 tsp lemon juice

1/4 tsp garlic powder

1/4 tsp paprika

Salt and pepper to taste

Red pepper flakes (optional, for garnish)

Fresh cilantro or parsley, chopped (for garnish)

Instructions
 

Prepare the Sweet Potato:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the sweet potato, then cut it into thin rounds (about 1/4 inch thick).

        - Toss the sweet potato slices in a mixing bowl with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

          Roast the Sweet Potato:

            - Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper.

              - Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and slightly crispy.

                Prepare the Avocado Spread:
