1 cup raw pistachios (shelled)

1 cup medjool dates (pitted)

1/2 cup rolled oats

1/4 cup unsweetened shredded coconut

2 tablespoons rose water

1 tablespoon honey or maple syrup (for vegan option)

1/4 teaspoon salt

1/4 teaspoon cardamom

1/4 cup finely chopped dried rose petals (optional for garnish)

Extra shredded coconut or finely chopped pistachios for rolling

Prepare the Ingredients: If your pistachios are not roasted, you may toast them lightly in a dry skillet over medium heat for about 4-5 minutes until fragrant. Allow them to cool before proceeding.

    Blend the Base: In a food processor, combine the pistachios, medjool dates, rolled oats, shredded coconut, rose water, honey (or maple syrup), salt, and cardamom. Pulse the mixture until it becomes a sticky, well-combined dough. Scrape down the sides as necessary.

      Check Consistency: The mixture should easily hold together when pressed between your fingers. If it feels too dry, add a bit more rose water or honey. If too sticky, sprinkle in a little more rolled oats.

        Shape the Bites: Using your hands, take a tablespoon-sized amount of the mixture and roll it into a ball (about 1 inch in diameter). Repeat until all the mixture is formed into bites.
