Ingredients

1 cup raw pistachios (shelled)

1 cup dates (pitted)

¼ cup unsweetened shredded coconut

2 tablespoons rose water

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon chia seeds (optional)

½ teaspoon ground cardamom

Pinch of salt

Extra chopped pistachios for rolling

Instructions

Prepare the Ingredients: Place the raw pistachios in a food processor and pulse until they are finely ground but not a powder. You want some texture to remain.

Add Dates and Flavors: Add the pitted dates, shredded coconut, rose water, honey (or maple syrup), chia seeds (if using), ground cardamom, and a pinch of salt to the food processor with the ground pistachios.

Blend Until Combined: Pulse the mixture until it starts to form a sticky dough. You may need to scrape down the sides of the bowl a few times to ensure everything is well combined.

Form the Bites: Once the mixture is ready, scoop out tablespoon-sized portions and roll them into small balls using your hands. If the mixture is too sticky, dampen your hands with a little water or oil to make rolling easier.

Coat the Bites: Place the extra chopped pistachios on a plate or shallow bowl. Roll each energy bite in the chopped pistachios to coat them evenly.

Chill and Set: Place the finished energy bites on a parchment-lined tray and transfer them to the refrigerator for at least 30 minutes to help them firm up.

Serve and Enjoy: Once set, your Sweet Pistachio Rose Energy Bites are ready to enjoy! Store any leftovers in an airtight container in the fridge for up to a week.
