2 ripe mangoes, peeled and diced

2 cups plain Greek yogurt (or dairy-free yogurt for a vegan option)

1/2 cup coconut milk (canned or carton)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

A pinch of salt

Optional: 1/4 cup shredded coconut or chopped mint for garnish

Instructions
 

Blend the Mangoes: In a blender, add the diced mangoes and blend until smooth. If you prefer a bit of texture, pulse a few times just to break down the mangoes but keep some small chunks.

    Mix Yogurt Base: In a separate bowl, combine the Greek yogurt, coconut milk, honey (or maple syrup), lime juice, and salt. Stir until the mixture is smooth and evenly mixed.

      Combine Mixtures: Gently fold the blended mango puree into the yogurt mixture. Stir just enough so it creates beautiful swirls without completely mixing the two together.

        Fill the Molds: Pour the mango-yogurt mixture into popsicle molds. Leave a little space at the top for the popsicles to expand as they freeze.

          Insert Sticks: If your molds allow, insert popsicle sticks into the center of each mold. If not, leave out the sticks until the mixture is partially frozen (about 1-2 hours), then insert them if required.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

              Unmold and Serve: To remove the popsicles, run the molds under warm water for a few seconds or gently pull on the sticks. If desired, sprinkle with shredded coconut or garnish with fresh mint before serving.
