2 cups elbow macaroni

1 cup sweet corn (fresh, canned, or frozen)

1/2 cup red bell pepper, finely diced

1/2 cup green onions, chopped

1/2 cup cucumber, diced

1/2 cup mild cheddar cheese, cubed

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon sugar

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

Fresh parsley or cilantro for garnish

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the macaroni is cooking, wash and chop the red bell pepper, green onions, cucumber, and any additional veggies you love.
