1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup chopped nuts (e.g., almonds, walnuts, or pecans)

1/4 cup dark chocolate chips (optional for drizzling)

Instructions
 

Prepare the Pan: Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Lightly grease with coconut oil or cooking spray.

    Blend the Dates: In a food processor, combine the pitted Medjool dates and almond butter. Pulse until the mixture starts to form a sticky ball, stopping occasionally to scrape down the sides.

      Combine Dry Ingredients: In a large mixing bowl, combine rolled oats, shredded coconut, chopped nuts, sea salt, and vanilla extract. Mix well to ensure even distribution.

        Mix It All Together: Add the processed date-almond butter mixture to the dry ingredients. Pour in the honey or maple syrup. Stir everything together until you have a sticky, cohesive mixture. If it's too dry, add a little water or more nut butter until it holds together well.
