Sweet Apple Crumble Snack Bars

For the Base:

1 ½ cups rolled oats

1 cup whole wheat flour

⅓ cup brown sugar, packed

½ tsp baking soda

½ tsp cinnamon

½ cup coconut oil (melted) or unsalted butter (softened)

¼ cup honey or maple syrup

1 tsp vanilla extract

Pinch of salt

For the Apple Filling:

2 medium apples, peeled, cored, and diced (I recommend Honeycrisp or Fuji)

2 tbsp brown sugar

1 tsp cinnamon

1 tsp lemon juice

For the Topping:

½ cup rolled oats

⅓ cup almond flour (or any flour of your choice)

¼ cup brown sugar

1 tsp cinnamon

2 tbsp coconut oil (melted) or unsalted butter (softened)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Base Mixture: In a large bowl, combine rolled oats, whole wheat flour, brown sugar, baking soda, cinnamon, and salt. Pour in the melted coconut oil (or softened butter), honey (or maple syrup), and vanilla extract, mixing until well combined. The mixture should resemble a crumbly dough.

      Press the Base into the Pan: Transfer about 2/3 of the oat mixture into the prepared baking pan. Press it down firmly and evenly to form the base of the bars. Bake for 10-12 minutes, or until slightly golden.

        Prepare the Apple Filling: In another bowl, mix the diced apples with brown sugar, cinnamon, and lemon juice. Toss until the apples are well coated. Let them sit for a few minutes to release some juices.

          Layer the Filling: Once the base has baked, remove it from the oven and sprinkle the apple filling in an even layer over the warm base.

            Make the Crumble Topping: In a small bowl, combine the rolled oats, almond flour, brown sugar, and cinnamon for the topping. Drizzle the melted coconut oil (or butter) over the mixture and mix until crumbly.

              Add the Topping: Evenly sprinkle the crumble topping over the apple filling.

                Bake the Bars: Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown and the apples are bubbling.

                  Cool and Slice: Remove from the oven and let cool in the pan for at least 15 minutes. Once cooled, use the parchment overhang to lift the bars out and place them on a cutting board. Slice into bars.

                    Serve and Store: Enjoy warm or at room temperature. Store leftovers in an airtight container for up to 4 days at room temperature or refrigerate for up to a week.
