2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup maple syrup or honey

2 cups milk of choice (dairy, almond, oat, or coconut)

2 large eggs

1/4 cup unsweetened applesauce

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Cooking spray or muffin cups for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line with parchment paper if desired for easier removal.
