Sun-Dried Tomato and Spinach Pasta

8 oz (225 g) pasta of choice (e.g., linguine or penne)

1 cup sun-dried tomatoes (packed in oil, drained and chopped)

2 cups fresh spinach (washed and roughly chopped)

3 cloves garlic (minced)

¼ cup extra virgin olive oil

½ teaspoon red pepper flakes (adjust to taste)

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ cup grated Parmesan cheese (plus more for serving)

1 tablespoon lemon juice

Fresh basil leaves (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add Sun-Dried Tomatoes and Spinach: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes. Then, add the fresh spinach, red pepper flakes, salt, and black pepper. Cook, stirring frequently, until the spinach wilts (about 2 minutes).

        Combine Pasta and Sauce: Add the drained pasta to the skillet. Toss well to combine with the sun-dried tomato and spinach mixture. Gradually add reserved pasta water a little at a time until you reach your desired sauce consistency.

          Finish with Cheese and Lemon: Remove the skillet from heat and stir in the grated Parmesan cheese and lemon juice. Mix until the cheese melts and everything is well coated.

            Serve: Plate the pasta and garnish with fresh basil leaves and extra Parmesan cheese. Drizzle with a touch of olive oil if desired.
