Ingredients

2 slices of whole grain or sourdough bread

1 ripe avocado

1 cup fresh strawberries, hulled and sliced

1 tablespoon honey or maple syrup (optional)

½ teaspoon lemon or lime juice

Salt and pepper to taste

1 tablespoon chia seeds (optional for crunch)

Fresh mint leaves for garnish (optional)

Instructions

Toast the Bread: Start by toasting the slices of bread until they are golden and crispy. You can use a toaster or a skillet for this; if using a skillet, toast on medium heat for about 3-4 minutes per side.

Prepare the Avocado: While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon or lime juice, salt, and pepper. Mash the avocado with a fork until it reaches your desired level of creaminess.

Assemble the Toast: Once the bread is toasted, spread the mashed avocado evenly on each slice.

Add Strawberries: Arrange the sliced strawberries on top of the avocado spread. If desired, drizzle the honey or maple syrup over the strawberries for an extra touch of sweetness.

Finishing Touches: Sprinkle chia seeds over the top for added texture and nutrition. Optionally, add some fresh mint leaves for a burst of flavor and color.

Serve: Slice the toast in half for easier handling and enjoy immediately while the toast is still warm.
