500g (1 lb) boneless, skinless chicken thighs, finely chopped

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low-sodium preferred)

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (adjust to taste)

4 green onions, finely chopped

1/2 cup water chestnuts, diced

1 head of butter lettuce or romaine lettuce, leaves separated

Sesame seeds for garnish

Fresh cilantro leaves for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, combine soy sauce, honey, rice vinegar, sesame oil, and crushed red pepper flakes. Add the chopped chicken thighs and mix well to coat. Cover and let it marinate for at least 20 minutes (or up to 2 hours in the fridge for deeper flavor).

    Cook the Chicken: Heat vegetable oil in a large pan over medium-high heat. Add the marinated chicken (reserve marinade) and cook for 6-8 minutes until browned and cooked through. Stir frequently to ensure even cooking.

      Add Aromatics: Reduce heat to medium. Add minced garlic and grated ginger to the pan, stirring for about 1-2 minutes until fragrant.

        Thicken the Sauce: Pour in the reserved marinade and bring it to a simmer. Allow it to cook for another 3-4 minutes until the sauce has thickened and is sticky.
