14 oz firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

1 bell pepper (any color), sliced

1 cup snap peas

2 cups broccoli florets

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup honey

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional)

Sesame seeds (for garnish)

Fresh scallions, chopped (for garnish)

Cooked rice or quinoa, for serving

Instructions
 

Prepare the Tofu: Start by pressing your tofu for at least 30 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes. In a mixing bowl, toss the tofu cubes with cornstarch until they are evenly coated. This will help create a crispy texture.

    Cook the Tofu: Heat 2 tablespoons of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes in a single layer and fry for about 3–4 minutes on each side, or until golden brown and crispy. Remove the tofu from the pan and set aside.

      Stir Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, snap peas, and broccoli florets. Stir fry for about 4–5 minutes, or until vegetables are tender-crisp. Add the minced garlic and grated ginger, and stir fry for an additional minute until fragrant.

        Make the Sauce: In a small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).

          Combine Everything: Return the crispy tofu to the pan with the vegetables. Pour the sauce over the tofu and vegetables. Gently toss everything together, allowing the sauce to coat all the ingredients and heating through for about 2–3 minutes.
