4 chicken sausages (about 12 oz), sliced into chunks

1 red onion, cut into wedges

2 bell peppers (red and yellow), sliced

2 medium zucchinis, sliced into half moons

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: Feta cheese, for topping

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Veggies: In a large mixing bowl, combine the red onion, bell peppers, zucchinis, and cherry tomatoes. Add the minced garlic.

      Make Marinade: In a separate bowl, whisk together the balsamic vinegar, honey, olive oil, dried thyme, smoked paprika, salt, and pepper until well combined.

        Combine Ingredients: Add the sliced chicken sausages to the bowl with the vegetables. Pour the marinade over the mixture, tossing everything until the sausages and vegetables are evenly coated.

          Transfer to Tray: Spread the sausage and vegetable mixture in a single layer on a large baking tray lined with parchment paper.

            Bake: Place the tray in the preheated oven and bake for 25-30 minutes, stirring once halfway through, until the sausages are cooked through and the vegetables are tender and caramelized.

              Garnish & Serve: Once baked, remove from the oven, and if desired, sprinkle with crumbled feta cheese and fresh basil leaves. Serve hot.
