1/2 cup red onion, thinly sliced

1/2 cup toasted pecans or walnuts

1/3 cup crumbled feta cheese (optional)

1/4 cup poppy seeds

For the Poppyseed Dressing:

1/4 cup apple cider vinegar

1/4 cup honey or agave syrup

1/2 cup vegetable oil or olive oil

1 tablespoon Dijon mustard

Salt and pepper to taste

Instructions

Prepare the Dressing: In a medium bowl, whisk together apple cider vinegar, honey (or agave), vegetable oil, and Dijon mustard until well combined. Season with salt and pepper to taste. Stir in the poppy seeds. Set aside to allow flavors to meld.

Prepare the Salad Ingredients: In a large mixing bowl, add the fresh spinach, sliced strawberries, and thinly sliced red onion. If using, sprinkle the crumbled feta cheese and toasted pecans over the top.

Dress the Salad: Just before serving, drizzle the poppyseed dressing over the salad. Toss gently to combine, ensuring all ingredients are evenly coated with the dressing.

Serve: Plate the salad immediately, garnishing with extra sprinkle of poppy seeds on top if desired.

Enjoy: This vibrant salad is best enjoyed fresh, but can be stored in the fridge for a day (dressing on the side to keep the greens crisp).
