Ingredients

1 sheet of puff pastry (thawed if frozen)

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 clove garlic, minced

1/4 cup grated Parmesan cheese

1/4 teaspoon nutmeg

Salt and pepper to taste

1 egg (for egg wash)

Olive oil (for sautéing)

Sesame seeds or poppy seeds (optional, for topping)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper.

Sauté the Spinach: In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook for 3-4 minutes until wilted. Season with salt, pepper, and nutmeg. Remove from heat and let it cool.

Prepare the Filling: In a mixing bowl, combine the sautéed spinach mixture with ricotta cheese, shredded mozzarella, and grated Parmesan. Mix well to ensure everything is evenly incorporated.

Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth it out. Cut the pastry into squares (about 3x3 inches) or rectangles, depending on your preference.

Fill the Pastry: Place about 1 to 2 tablespoons of the spinach and cheese filling in the center of each pastry square. Be careful not to overfill.

Seal the Bites: Fold the pastry over the filling to create a triangle or rectangle, depending on your shape. Press the edges together to seal. You can use a fork to crimp the edges for a decorative touch.

Egg Wash: In a small bowl, beat the egg. Brush the egg wash over the tops of each pastry to give them a nice golden color when baked. Optional: sprinkle sesame seeds or poppy seeds on top for added texture and flavor.

Bake: Place the filled puff pastry bites on the prepared baking sheet. Bake in the preheated oven for about 15-20 minutes, or until they are puffed and golden brown.

Cool and Serve: Once out of the oven, let them cool slightly on a wire rack. Serve warm and enjoy as a delightful appetizer or snack!
