Spinach Feta Turkey Burgers

1 lb ground turkey (preferably lean)

1 cup fresh spinach, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup breadcrumbs (whole wheat recommended)

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 large egg, beaten

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil (for cooking)

Burger buns (whole wheat or regular)

Toppings: lettuce, tomato slices, cucumber, tzatziki sauce or yogurt

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the ground turkey, chopped spinach, crumbled feta cheese, breadcrumbs, diced red onion, minced garlic, beaten egg, oregano, salt, and pepper. Mix gently with your hands or a spatula until all ingredients are well incorporated.

    Form the Patties: Divide the mixture into four equal portions and shape them into patties, about ¾ inch thick. Press a small indentation in the center of each patty to help them cook evenly.

      Cook the Patties: Heat the olive oil in a non-stick skillet or grill pan over medium heat. Once hot, add the patties. Cook for about 5-6 minutes on one side until browned, then flip and cook for another 5-6 minutes on the other side, or until the internal temperature reaches 165°F (74°C).

        Toast the Buns: While the burgers are cooking, you can toast the burger buns lightly on the grill or in a separate pan until they are golden brown.

          Assemble the Burgers: Once cooked, place each turkey patty on the bottom half of a toasted bun. Top with lettuce, a slice of tomato, slices of cucumber, and a generous dollop of tzatziki sauce or yogurt. Place the top half of the bun on top.
