Spicy Roasted Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon garlic powder

Salt and black pepper to taste

4 whole grain tortillas or wraps

1 cup fresh spinach leaves

1 medium avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup Greek yogurt or dairy-free alternative

Juice of 1 lime

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, cumin, cayenne pepper, garlic powder, salt, and black pepper. Toss until the chickpeas are well-coated.

      Roast the Chickpeas: Spread the chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, shaking the pan halfway through for even cooking.

        Prepare the Wraps: While the chickpeas are roasting, prepare the wraps. Lay each tortilla flat and spread a thin layer of Greek yogurt on each one.

          Add Spinach and Toppings: Top the yogurt with fresh spinach leaves, avocado slices, cherry tomatoes, and red onion.

            Assemble the Wraps: Once the chickpeas are done roasting, allow them to cool slightly, then scatter them over the veggies on each wrap.

              Finish with Lime Juice: Squeeze fresh lime juice over the wraps, then sprinkle with cilantro if using.

                Roll & Serve: Carefully roll each wrap tightly, slicing in half if desired. Serve immediately or wrap in foil for a delicious meal on the go!
