1 cup cooked black beans (drained and rinsed)

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1 cup shredded carrots

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 avocado, sliced

½ cup crumbled feta cheese (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

1 cup tortilla chips (for crunch)

Instructions
 

Prepare the Veggie Filling:

    - In a large skillet over medium heat, add a splash of oil. Once hot, add the chopped red onion and jalapeño. Sauté for 2-3 minutes until the onion becomes translucent.
